After a whirlwind year, with the majority spent restricted in lockdown- we predict this Christmas is going to be more special than ever before. Families and friends can rejoice at being able to spend this precious time of year with their nearest and dearest after so long apart. Appreciating every simple moment together all the more, this year…Christmas is set to be truly magical.

TRUFFLE & PARMESAN, CRUMBLY BRUSSEL SPROUTS
The sprout, for everyone…
Even the avid sprout avoiders amongst us will find it impossible to devour these green bundles of goodness. Simply season your sprouts with plenty of salt and pepper. Lay them out on your pan over the flames (remember not to pack too tightly so they crisp up perfectly). Let them cook for 25-35 minutes or until they start to turn brown. Toss them in truffle oil and sprinkle a couple of heaped teaspoons of parmesan over the top. Return to the grill for 4-6 minutes and then serve.

CRISPY, FLUFFY THYME & GARLIC ROASTIES
Everyone will be loading up on these…
Ah the remarkable roastie. Perfectly crunchy on the outside with all the fluffy deliciousness on the inside. Simply peel and cut your Maris Piper potatoes to size (we use a combination of sizes, just roughly chopped), then bring them to the boil over the grill for around 15 minutes (or until they soften up). We like to shake them up slightly so they begin to fluff up. Leave them to cool (you could do this the day before and leave them overnight to chill in the fridge). Meanwhile heat your oil in your roasting tray, our favourite to use for the ultimate crisp is goose fat. Pop your potatoes in, making sure they’re all coated, seasoned with salt and pepper and place them in the Aquaforno to begin working its magic! After around 45-50 minutes, add chopped garlic and either fresh or dried rosemary then pop back in your Aquaforno for around 25 minutes (or until they have crisped up a treat). Yum.
SAGE PIGS IN BLANKETS WITH A HONEY GLAZE
Just when you thought your favourite pigs in blankets couldn’t get better.
Take a chipolata, wrap a sage leaf around it and then, the icing on the cake, wrap it all up with some delicious streaky back. Pop on your grill and then brush with honey and grill for around 30 minutes, or until the bacon has begin to crisp. Lovely.
THE PERFECT TURKEY
No dry turkey for you this year!
The Aquaforno Rotisserie is the only tool you need to deliver the most succulent turkey to your tables this year. Mix up the rub of your desire, we love Ross & Ross Turkey rub. Massage into your bird and leave to chill overnight.
Cooking time is dependent on the size of your turkey but we’d recommend around 15 minutes per pound. Once your turkey has turned golden brown on the outside and reached 165 degrees- you are good to go. Stuff the inside of your turkey with delicious things, the same as you would with a roast turkey, for an extra injection of flavour!
CHESTNUT, CRANBERRY AND BACON STUFFING
Fruity, nutty & delicious...
Soak your cranberries in port for a few hours prior to cooking (it is Christmas after all). Then, fry up some onions, bacon lardons in your paella pan until they start to brown. Once cool add 500g of sausage meat, 160g of fresh breadcrumbs and 50g of butter, plus dried rosemary. Place in a tray and pop in the Aquaforno grill for 35-40 mins. Tip: 5 minutes before taking out add a knob of butter to the centre and allow to melt- tasty!
HONEY & MUSTARD ROAST PARSNIPS
Scrummy parsnips with a sweet kick…
Cut your parsnips in half or lengthways and boil over the stove for around 5 minutes. Let them cool slightly and then add to a heated oil tray in your Aquaforno grill and cook for 20 minutes. Meanwhile, mix a couple of tablespoons of runny honey and wholegrain mustard. Once the parsnips have cooled, drizzle over the honey and mustard mix. Cook for a further 20 — 25 minutes and serve. Caramelised in texture with a punchy, yet sweet flavour- thank us later.

BLUE CAULIFLOWER CHEESE WITH A CRUMB TOP
In our eyes, one of the best ways to eat cauliflower! Boil up the cauliflower on your stove for a few minutes until al dente, then allow to cool. In a separate pan melt 50g of butter, 50g of plain flour, a teaspoon of Dijon mustard and then slowly mix in 600mls of milk until you have a thick sauce like consistency. Stir in your blue cheese (to taste, we like to add lots and lots!). Pop your cooled cauliflower in a heatproof dish and pour over the creamy cheese sauce. Scatter fresh breadcrumbs, season well and pop in your Aquaforno grill for 20 mins. Enjoy.
